It's amazing how little actual meat he manages to get out of a whole duck
Unbelievable! In a spectacular restaurant, with quality live music, the couple in the background, who are not young, didn't leave their cell phones and didn't exchange a word! We are truly lost!
honestly, i think it looks fuckin gross.

French food is so disgusting. Uncooked duck, which is gamey at any temperature, topped with blood and cognac. May as well throw a used tampon in there also.

Myoglobin. Not blood. You'd expect that he knows this.
Yeah, I thought that initially, but I think with some dishes (e.g coq au vin and this), the blood is retained (somehow) during the slaughter process and used to thicken the sauce. I'm not sure without looking it up, tbh!!

Had the pleasure of eating this dish some years ago at the La Couronne, in Rouen, France. I like Diego's showmanship here much better, and the color of the sauce looks way more appetizing!

My father was friend to Michael and 1997 we were all together in Mallorca one week together. Depending on my French from School we got quickly friends and I remember a dinner we had together. To find the right tomatoes we spend 4 hours on different markets..Micheal was smelling them and he told me. Martin, not good enough and we drove to next and finally find the ones he liked. This is what a Grand Chef do even if he visit my father on Holidays...amazing commitment to do the best cooking results in every situation.
